Crispy Smashed Potatoes

Hello friends! Hope everyone had a really happy & safe Independence Day with your family & friends! We spent ours driving around the outskirts of Boise until about 11:30pm so our dogs weren’t freaked out by our neighbors all-out assault on the neighborhood (well, that’s what it sounded like anyway). It was actually really nice though-  we got to see everyone’s fireworks around the city while listening to our favorite playlists, & the dogs got a relaxing car ride, which they love. 🙂

Ok ok, now back to FOOD

Today I’m sharing one of my favorite side dish recipes that truly never disappoints. These “Crispy Smashed Potatoes” from Liz Fourez’s Love Grows Wild blog, literally go with anything. They’re really easy to make & are much healthier than fried potatoes. They’re pretty much a staple in our household, & I’ve even taken them to a few parties/picnics & there’s rarely leftovers. Give them a go!

Crispy Smashed Potatoes

Ingredients:
1 1/2 pounds small potatoes (yellow potatoes work best, but I’ve also used red)
olive oil
coarse salt
Crispy Smashed Potatoes
Instructions:
Preheat oven to 450 degrees. In a large pot, bring potatoes to a boil in salted water. Reduce heat and simmer until tender, about 18-20 minutes. Drain potatoes and transfer to a baking sheet. Let cool 5 minutes, then gently smash each potato with the back of a solid spatula or the heel of your hand.
Drizzle generously with olive oil and season with coarse salt, then gently flip the potatoes over and repeat on other side. Roast in the oven for 15 minutes, then flip potatoes and roast for another 15-20 minutes until golden brown and crisp.
Serves 4
